indonesian grilled turkey

                     indonesian grilled turkey 2-1/2 to 3 lbs. boneless turkey breast half 1/3 c. chunky peanut butter 1/3 c. teriyaki sauce (or 1/3 c. soy sauce and sherry) 1/4 c. lemon or lime juice 1/4 c. vegetable oil 2 t. ground ginger 2 t. sweet basil 2 t. onion powder 2 t. garlic powder 1/4 to 1/2 crushed red pepperCombine all ingredients except turkey in blender until SMOOTH.  RESERVE 1/2 CUP OF SAUCE.  POUR REMAINING SAUCE OVER turkey and marinate 2 to 24 hours.  Grill over medium hot coals (or bake in broiler pan at 400 degrees) for 1 to 1-1/2 hours, basting with marinade.  You can use a drip pan with 2 inches of water under the turkey with the coals around it, particularly if you double the recipe and use a whole breast.  Let stand 10 minutes before carving.  Serve with reserved sauce.                             ...

                        creamy fish chowder 2 T. chicken bouillon 1 bay leaf 1 c. diced carrot 1 c. diced potato 1 c. diced celery 1/2 c. chopped onion 1/4 t. crushed oregano 1 lb. skinless fish fillets 1/4 c. butter 1/4 to 1/3 c. flour 2 c. milk fresh parsleyCombine bouillon and bay leaf with 1 quart water.  Add VEGETABLES, 1/4 T. SALT, 1/4 T. PEPPER AND THE OREGANO.  BRING TO boiling and reduce.  Cover and simmer 10 minutes until vegetables are just tender.  Add fish and cook 5 minutes until fish is done.  Melt butter, stir in flour, 1/2 t. salt, and 1/8 t. pepper.  Add milk all at once and stir until bubbly.  Slowly add the thickened mixture to the fish.  Remove bay leaf.  Garnish bowls with fresh parsley.  Makes 4 to 6 servings.                                           ...

VEGETARIAN CHILI

 VEGETARIAN CHILI  (from the Frog Commissary Cookbook) [Note:  Although the recipe calls for red kidney beans, I've made it successfully with white chili beans (cannelloni) and, believe it or not, with chick peas.  Also, it is absolutely necessary that you have all ingredients ready before you start.  I usually put the onions, celery, green peppers, carrots, garlic, mushrooms, spices, salt and pepper together in a large bowl so they can be simultaneously dumped into the olive oil, as it is cooking them together over high heat for only 1-2 minutes that really brings out the flavors.  I cook this in a 5-quart pot, not a skillet, but if you have a big skillet, go ahead.  Also, instead of 2 cups tomato juice and 2 cups chopped tomatoes, I use a whole can of Italian plum tomatoes with their juice.  And finally, don't be intimidated by the long list of ingredients.  You probably have most of them in the house right now!] 1/3 cup olive oil 2 cups fi...

                             rommegrot 1 c. sour cream, preferable unhomogenized 1 c. + 3 T. sifted flour 2 c. scalded milk 1/8 t. salt 1 t. sugar brown sugar cinnamonSIMMER CREAM FOR 10 MINUTES.  ADD THREE TABLESPOONS OF flour, stirring constantly.  Simmer until butterfat separates.  Remove from heat, skim of butterfat and reserve it.  Return to heat and gradually add remaining ingredients except brown sugar and cinnamon.  Continue to stir until it reaches the consistency of pudding.  Serve warm with brown sugar, cinnamon, and reserved butterfat.  Makes 6 servings at 218 calories each.                                               From:  Donna Kummer                               ...

mom's apple pie

                          mom's apple pie Crust (makes 2): 2-1/2 c. flour salt 3/4 c. shortening (maybe MORE) ice water Filling (each): 1/4 c. sugar 1 T. flour sliced apples 1/2 c. sugar cinnamon 1 T. butterPut 1/4 c. sugar and flour on pie crust.  Arrange apples.  Sprinkle with remaining sugar and cinnamon and dot with butter.  Bake at 400 degrees (375 for glass) for just under an hour.                                            From:  Minnie Endreson                                 Date Entered:  September 15, 1990 

LEMON POPPY SEED SCONES

                      LEMON POPPY SEED SCONES 6 c. flour 1 c. sugar 3 lemon rinds 3 T. baking powder 1-1/2 t. salt 1-1/2 c. softened butter 3 T. poppy seeds 3 eggs juice of 3 lemons milk           Combine dry ingredients and cut in butter.  Blend enough milk to make 2 cups with eggs and juice.  Combine wet and dry mixtures.  Roll dough out to 1-1/2 inch thick.  Cut into 3- inch rounds.  Place on greased sheets.  Bake at 375 degrees for 20 to 25 minutes.  Makes 10 to 12 large scones.                                               From:  Donna Kummer                                       Date Entered:  June 7, 1991

             hot turkey salad with orange vinaigrette 1 lb. honey roasted turkey breast 8 c. torn mixed greens 4 chopped green onions 1 red bell pepper, cut into rings Dressing: 1/2 c. orange juice 1/4 c. oil 1 T. red wine vinegar 1 c. fresh pineapple or 1 8 oz. can chunks 1/2 c. dried banana chips (opt.) 1/4 t. cumin 1/4 t. garlic powder 1/4 t. black pepperCut turkey into thin strips.  Arrange remaining salad ingredients on four plates.  Heat dressing ingredients until boiling.  Add turkey.  Heat and stir about 5 minutes.  Spoon over salad just before serving.  Sprinkle with banana chips if desired.  Makes 4 servings.                                               From:  Donna Kummer                               ...

glazed nuts

                            glazed nuts 1 egg white 1/3 c. sugar 1 t. cinnamon 2 c. whole pecans, almonds, or walnuts 1 T. butterBeat egg white until barely stiff.  Gradually beat in sugar mixed with cinnamon.  Stir in nuts until well-covered.  Microwave butter in 12 x 8 dish until melted.  Spread over bottom.  Spread nut mixture in dish.  Microwave on high 4 to 5 minutes, stirring once.  Nuts should be glazed and dry.  Remove from pan and spread on waxed paper to cool.                                               From:  Donna Kummer                                 Date Entered:  September 15, 1990 

MUD CAKE

                             MUD CAKE 4 oz. unsweetened chocolate 6 T. butter 3/4 c. strong coffee 2 T. bourbon 2 eggs 1/2 t. vanilla 1 c. cake flour 3/4 c. sugar 1/2 t. baking soda 1/8 t. salt           Heat chocolate, butter and coffee over very low heat until chocolate melts.  Cool 10 minutes.  Add bourbon, eggs, and vanilla.  Sift flour with sugar, soda, and salt.  Add to chocolate mixture and beat until smooth.  Pour into greased and flour 8-1/2 x 4-1/2 inch loaf pan.  Bake at 275 (yes, 275) degrees for 45 to 55 minutes.  Cool in pan 15 minutes, then turn onto rack.  Serve with unsweetened whipped cream or vanilla ice cream.  Makes about 8 servings at 236 calories each.                                               From: ...
