Campfire Cooking (Breakfast): Baggie Omelettes

Ingredients:
.1 plastic ziplock type bag per person, with their name written on it with permanent marker.
.1 or 2 eggs per person
.grated cheese
(you can buy the kind in the re-sealable bags)
.assorted types of garnishes such as: real bacon bits (easier than cooking bacon), tomatoes, onions, peppers, or anything else you can think of.
To round out the food groups you could make toast or (English) muffins to fulfill the grain group. Orange or vegetable juice, and/or milk would be good types of healthful drinks. If you have all the healthy you want ,  hot chocolate would be good for cold mornings.

Preparation:
. About 15 min. before breakfast boil water, so it will be ready for meal time.
. Make sure every person has a plastic zip baggie labeled with their name written in permanent marker.
. Give everyone an egg or two and tell them to crack the egg in the baggie. (you might want to help the little ones with this) and seal the bag tightly.
. Display the garnishes like tomatoes, cheese or anything else available on a table and allow everyone to add what they want.
. Seal the bag tightly, and I repeat tightly, and shake until everything is thoroughly mixed.
. Place tightly sealed baggies in the boiling water. Cook for 5 min. or until eggs are firm.
. Make sure the baggies are cool before you hand them out. Campers can eat right out of their baggies.

This recipe is geared towards groups of girl
or boy scouts camping or backpacking. But
it works well for anyone at home or with family
members at the campground.
